Pét-Nat

Pét-Nat, or "pétillant naturel" (“naturally sparkling”), is a sparkling wine style that became quite trendy in recent years but is actually rooted in centuries-old winemaking traditions. It’s made using the so-called “ancestral method," one of the earliest techniques for creating bubbles in wine.

Unlike Champagne or other traditional sparkling wines, which undergo two separate fermentations, Pét-Nat is bottled while the grape juice is still fermenting; therefore, as the remaining sugars continue to ferment inside the sealed bottle, carbon dioxide builds up naturally, creating gentle, often softer bubbles. These wines are usually less polished than conventional sparkling wines: they can be slightly cloudy from residual yeast, vary from bottle to bottle, and often showcase fresh, vibrant, and sometimes unexpected flavors.
