Organic Sauvignon Blanc grapes from our beloved Váradi vineyard were transferred into stainless steel to ferment after pressing. We kept it on its lees for 7 months, hence the salty, herby, and brioche-esque undertones.
Volcano power! We adore the energy of the extinct volcano we live on (Mount St. George is an ancient “witness” mountain, in case you didn't know!). We wanted to express it through this fresh beauty. Grassy, nettle-esque, lively Sauvignon Blanc with smoky, salty undertones on the palate. Crisp, herbal throughout with uplifting, long-lasting acidity.
Organic grapes from our beloved Váradi vineyard, this wine was fermented in stainless steel and kept on its lees for 7 months. Panzanella salad with smoked Parma ham, oxheart tomatoes, flaky salt, and a glass of Sauvignon Blanc may just be the best Saturday lunch around!
