VINIFICATION
Organic Sauvignon Blanc grapes were hand-picked and after a full-bunch press, were naturally fermented in stainless steel, with partial full-bunch maceration. The wine matured on the lees for 7 months, hence the salty, herby, and brioche-esque undertones.

Panzanella salad with smoked Parma ham, oxheart tomatoes, flaky salt, and a glass of Sauvignon Blanc may just be the best Saturday lunch around!
